My favorite part of summer is the amount of amazing food that is in season. And nothing says summer more than a gorgeous bounty of tomatoes! From your run-of-the-mill beefsteak to the exotic Green Zebra heirloom, the tomato is one of my favorite fruits. So in honour of the beginning of tomato season, here is my favorite gazpacho recipe that I got from a lady when I was travelling in Spain.
2 garlic cloves, peeled & sliced
1 green pepper, chopped
1 1/2 lb very ripe tomatoes (you can use any variety you like, as long as they are sweet!)
3 inch baguette, sliced & dried overnight (as long as it’s slightly stale, any bread will do)
1/2 cup good extra virgin olive oil
2 tbsp red wine vinegar
1 cup cucumber, peeled & diced
1 cup onion, diced
Put garlic, green pepper, tomatoes, baguette, oil, and vinegar in blender. Blend until very smooth. Pass soup through fine sieve. Season with some nice salt. Chill soup in fridge for at least an hour. Add as much garnish as you like before serving!
